Sustainable Easter menu: sweet-and-sour salad with fruit

The ingredients you need to prepare this sweet-and-sour entry are:

  • Lettuce or iceberg;
  • 1 orange cut into segments without peel;
  • ยฝ sweet onion;
  • A few almonds, pine nuts or walnuts;
  • Formaggio grain flakes;
  • Salt, oil and vinegar.

If you have a jar of white yoghurt in the fridge, even Greek-style, you can use it as an accompanying sauce for the sweet and sour salad.

Sustainable Easter menu: bulgur with chickpeas and limone

The ingredients you need to prepare this light, limone flavoured first course are:

  • Bulgur;
  • Canned chickpeas;
  • 1 limone untreated.

Cook the bulgur in salted water for 10-15 minutes at the most. If you want to reduce the cooking time even further, use the pressure cookerone and in 5-7 minutes your bulgur will have reached the right consistency. Drain it and place it in a casserole dish.

Drain the chickpeas and toss them quickly in a pan with garlic, oil and rosemary; finally, add them to the bulgur.

Grate the zest of the limone and add that too, adding a few drops of juice.

The dish should be eaten cold to fully enjoy its Mediterranean aroma.

Sustainable Easter menu: baked carrots with taleggio cheese

The ingredients you need to make this tasty side dish are:

  • Sliced carrots;
  • Taleggio;
  • Breadcrumbs;
  • Oil, salt and pepper.

Place the sliced carrots in an oven tray and season with salt, oil and pepper. Add a few taleggio cheese flakes and dust with breadcrumbs. Place in the oven at 180 degrees for 15-20 minutes maximum.

Sustainable Easter menu: cream and ricotta cheese with coffee

To make this no-bake dessert, the ingredients you need are:

  • Whipping cream;
  • Fresh cottage cheese;
  • Coffee.

Mix the cream and ricotta together and fill with the contents of the moulds, which you will then leave in the fridge to compact for a couple of hours. When it is time for dessert, plate the cake and pour a few drops of hot coffee over it.
